I know that the large spider is small size, the huge and giant water spiders are medium size, and the giant and phase spiders are large size monsters.
What does this mean that the approximate spider body size and legs span are per each type?

5'-7' end to end is man-sized but the the various spiders types are by types for specifics. That is, they fit the description. Roamers are huge, regular web bulders are giant and cob web builders are large. That is the pattern. The description in C1 THE HIDDEN SHRINE OF TAMOACHAN has a jumping spider variant of a "huge" spider with variant movement rate (slower) and in this same adventure there is a straight out of the MONSTER MANUAL (1977) "trapdoor spider" so there is definitely a forethought as to placement and it's lair is 4' wide and 4' tall so body-size is less than 4' for a medium spider. So it would look like this in its most stretched size approximating the spider depicted in the Monster Manual here:

I always appreciate those graphics! I play: Large (maximum leg spread, 2 feet), Huge (maximum leg spread 7 feet; average 5 feet) and Giant (usual maximum of 10 feet; but larger are possible). In "our" world, the South American Bird-Eating Spider (aka: Goliath Birdeater) is the largest living arachnid known, with a leg spread of about one foot...
