In perspective, the grappling and pummeling rules came out as the MONSTER MANUAL was being released in DRAGON #11 (DEC 1977) in the article D&D VARIANT - BRAWLING: THE EASY WAY "OUT" IN D&D by Robert J. Kuntz . I was just referring to UA's take on non-lethal combat when I said they don't grapple. Meanwhile the DMG page 73 says: Monsters using these attack modes will choose the most effective if they are human or humanoid and have above average intelligence, otherwise they will use the modes in random fashion. Creatures will always attack to overbear if they do not use weapons, except bears and similar monsters who seek to crush opponents by hugging attacks (these are grappling). So while I was thinking "hug" technically a hug would be a grapple (which is disallowed in UA*). Still an overbearing hug was what I had in mind like the horta for a quick mental image. *(UA page 107-108)Non-corporeal creatures, those who exist in the Astral and Ethereal Planes, and non-intelligent slimes and jellies cannot grapple; neither could a beholder, for instance, or an orc that is bound hand and foot.

Green slime is another "monster" that is tough to adjudicate as a monster. They're more like a trap.
